What does it mean to shadow someone at work?

What does it mean to shadow someone at work?
I'm a junior in high school and my older cousin offered me a chance to shadow his friend (who is an optometrist & owns his own practice). I know that shadowing means something along the lines of just observing the person but not doing anything right?

Will this help a lot if i want to become an optometrist?
Am I old enough to shadow someone?
What will I do there?

oh and i kind of have a side question that doesn't relate to this question haha:
if i volunteer at a hospital, is that a waste of time if i want to be an optometrist and not a doctor/nurse, or will it actually help me?
